The 7 magical *pings*

Harvest season is just coming into full swing. There is nothing better than the abundance of fresh fruits and vegetables. I grew up watching my mom spend late summer and most of fall canning and bottling all the summer goodness. Salsa, Peaches, Pears, Tomatoes, pickles, Dilly beans...

Snipping greenbeans

One of my all time favorites is DILLY BEANS {pickled greenbeans}. Last year I put up my first batch. Jake was my buddy and spent the evening snipping greenbeans with me, ok he spent the evening begging for them :) The following day he hung out with me while I bottled them. This year, Cezar joined in on the fun. Jake got Cezar to munch on the fresh greenbeans with him and kept me company once again as I snipped them.

Dilly Beans

The next day I spent the early morning stuffing my bottles with fresh garlic, hot peppers, fresh dill and the greenbeans. Such beautiful jars! After filling them and adding the vinegar, I put them in the canner. The BEST part of canning is after you process the bottles and set them on the counter to cool.... is waiting to hear the *pings* as the bottles seal. I set my pints out and pulled up a piece of the counter to sit on as I waited to hear the 7 magical *pings*. As each one sounded I got the biggest grin.

Canning is something I would have never thought I would do. I always imagined that it was a 'mommy' thing to do. Now I'm completely for it. It's a wonderful way to store wonderful food and stock up your food storage. I look forward to putting up more than just Dilly beans. Salsa, peaches, tomatoes, and whatever else looks yummy. I feel so accomplished ;)

Okay, so I have the dill (tons of that), the fresh garlic, the hot peppers, and the jars. What else do I need? (Beside a recipe?) And when do I know when my peppers are ripe? I don't know if they're supposed to be yellow, or to wait. I am accumulating little red ones though. How hot are they? Tomorrow I'm doing zuchinni relish.
